AMN and NISCO Pea protein concentrates, raw and texturized, represent a valuable protein alternative to enrich a broad spectrum of food formulations. Pea concentrates represent healthier and more sustainable alternatives to animal protein, both in partial and total replacement levels.
The aim of the study was to investigate the sensorial impact of replacement diverse carbohydrates with pea flourconcentrate in Frankfurters. The study was run at the Danish Meat Research Institute in the period 2018/2019.
