High protein foods with AM Nutrition and NISCO Pea concentrates

AMN and NISCO Pea protein concentrates, raw and texturized, represent a valuable protein alternative to enrich a broad spectrum of food formulations. Pea concentrates represent healthier and more sustainable alternatives to animal protein, both in partial and total replacement levels.
The present work was conducted under the frame of the Norwegian project “Måltidets glede” which has, as main goal, to develop new food alternatives with high protein content for diverse consumer segments. The elaboration of the recipes and main work was conducted by professional chef Stian G. Iversen who counts with high expertise in the area.
The evaluation of the products was done at Måltidets Hus , Stavanger, Norway on Dec. 4th and 6th 2018. “Måltidets Hus” is a Norwegian competence centre for food research, playing an important role in knowledge transference and as a network platform between business and research communities.
